This past Saturday, I had the opportunity to cater cupcakes for my husband's cousin's wedding. This was my first opportunity to make cupcakes on such a grand scale - 18 dozen - and I absolutely loved the experience. I would definitely do it again. In fact, if I could open up my own cupcake shop today, I just might! It really was a privilege and a joy.
Here are all the finished cupcakes, waiting to be displayed at the wedding
I spent the five days leading up to the wedding making the 216 cupcakes. Thanks to my Bosch, I could make four dozen in one batch.
Piping in the batter made it quick and clean, and helped keep the cupcakes all the same size
Now multiply this by four or five and you can imagine what my kitchen looked like! The cupcakes I made early, I froze in dozens in freezer bags until the morning of the wedding.
Wedding day, I woke up early and made three triple batches of frosting. Strawberry, Key Lime, and Vanilla. This, my friends, is a LOT of frosting - enough to frost 8 dozen cupcakes! Let's just say that I may or may not have gone through 16 sticks of butter and 7 32oz. packages of powered sugar.
The wedding colors were light green accents with navy and bright pink. Hence my choices for cupcakes:
Key Lime
Blackberry Vanilla
And Strawberry
Let's have a closer look

Strawberry turned out to be the favorite. The frosting tasted like fresh strawberries, and I have to admit, it was my favorite too.
My sister-in-law did all the cupcake stands and decor. It turned out to be so beautiful. I really felt overwhelmed with how wonderful it turned out. All that work was SO worth it. I loved every part of the process. And I loved helping make this wedding day a little sweeter.
